Hi everyone (specifically UK)! Has anyone seen the Ottogi sesame ramen in a while? This was my fave ramen back in the day, maybe like 4 years ago. And I bought it a lot from starry mart and a few asian supermarkets. Then all of a sudden they vanished and I haven’t seen them since! Reheating Refrigerated Paitan Broth
I’ve made some Tori Paitan that tastes really good. First night it tastes great as with all soup, but when I brought the gelatinised soup back to a roll ing boil and emulsified it, it lacked some of that body and slight coating you get from the emulsion.
I’m aware that the volatile flavour compounds dissipate further reducing the overall taste, but was wondering whether fortifying it again with more aromatics or reducing the water content might help with the ‘kokumi’.
Currently i’ve just been adding salt to bring up the taste whilst not having to darken it by adding more tare when making up a bowl.
Any advice is appreciated~
