you prolly used a malicious dapp and approved spending. i would first revoke all approvals, then move all funds to a fresh wallet and never reuse the old one again (discard it).

It's very simple: just leave out crypto payments and all that.
When booking a flight, you open a payment window lets say 30 minutes. During this period, you enter your details and proceed to the page where you enter your card information. At this point, if the price changes beyond the volatility buffer(preset), it displays a 'price changed' message.
There is a similar flow used by crypto gateways n you can easily find examples of this on each crypto gateway how they work.
Not stripe as they deal mostly with stables. There are others.
Its not a big deal and this question is actually very silly because COTI is not the payment gateway.

Well on a grand scheme it also works like that in fiat payments. In EU you can buy US products in dollars and you will pay the amount converted. If it is a buy now pay later (booking.com) then the currency can also fluctuate
